Orecchiette

Orecchiette are a type of fresh pasta made from re-milled durum wheat flour, a gastronomic symbol of the Apulia region. Strictly handmade, the orecchiette have the typical round and concave shape, with a wrinkled surface and the inside thinner than the edge.
